WITH SAKE ART TOKYO
Go deeper into
the brewery.
SAKE ART TOKYO does more than select finished sake. We work with breweries to create a new expression together.
Our bottle with Urazato Brewery is SAT 001, Melon Cotton Candy. It begins with aroma and instinct rather than with a list of technical categories.

Melon
Cotton Candy.
Bright, melon-like aroma.
Gentle sweetness from rice.
These are sensory descriptions of SAT 001. They are not claims that a particular aroma molecule has been analytically identified as the cause.
A bright, fresh direction in the aroma.
Light when chilled, with a fuller impression as the temperature rises.
BREWING NOTES
Ogawa yeast.
Brewery context.
Urazato Brewery describes Ogawa yeast as a low-acid yeast that ferments well at low temperatures and produces a delicate aroma. The Urazato brand explicitly frames its work around exploring this yeast.
At the same time, we do not fill in unpublished SAT 001 specifications—such as its exact rice, polishing ratio or yeast—from assumptions. Brewery-wide practice and bottle-specific specifications remain separate.
